Preparation (8-9 croquettes)
For the croquettes: cook the rice as indicated on the package and add butter, grated cheese, onion chopped and sauteed, and chopped parsley.
Shape them by hand and stick a piece of mozzarella in the middle.
Coat them in flour, then dip them in the beaten eggs and then coat them in breadcrumbs. Cook in the oven in an oiled pan for 20 minutes.
